Kolomna is a small merchant town just outside of Moscow made truly unique by the apple and plum trees that have taken over its gardens. In the 19th century, Kolomna residents made pastille, a sweet made from fruit pastes, from the fruit growing all over the town. The result was so delicious that it was even supplied to the Imperial Court. Leo Tolstoy and Fyodor Dostoyevsky are two other well-known pastille fans. Their love for this sweet is described in their family records. Nowadays in Kolomna the town has decided to bring back the forgotten taste by reinstating the tradition of making the old Russian treat. Many old pastille recipes have been found in both Russian and foreign book archives, making it easy for anyone to try if they so desire. Our host Olga Degtyareva, along with employees from the Kolomna Pastille Museum, has cooked up one of the most popular types of this sweet.
