Family Traditions in Russian Cuisine

Our presenter Maria Mumicheva finds out about all the subtleties involved in preparing real Russian pelmeni from Grandma Serafima, who has for years been passing on her skills here. And you can also find out how the first pelmeni appeared, and why the pies that Grandma Serafima cooks to her grandmother's recipe are called karasiki - «little carp».   Recipe «Lamb dumplings» Recipe «Fish-shaped apple and berry pies»   Recipe «Goat cheese dumpling omelet»   Lamb dumplings recipe serves 2 persons; preparation time ~ 40 minutes; cooking time ~ 10 minutes Ingredients: 500 g. flour, 2 eggs, 500 g. lamb, 2 white onions, fresh basil, fresh coriander, garlic, vegetable oil, fresh green herbs. Directions: To make the pasta, beat the eggs, a little water and salt together until the mixture has a uniform consistency. Finely chop the basil and coriander and add it in. Little by little add in the flour until the pasta becomes tough and elastic. Finely chop the onion and put it through the meat grinder with the lamb. Add in some more of the chopped coriander and basil along with salt. To make the garlic paste, chop the garlic pour in a little oil and put in the blender until it has a uniform consistency. Add as much or as little of the garlic paste as desired to the ground lamb and stir. Make the dumplings by rolling out the dough into little circles and putting a small scoop of the lamb filling and pinch the edges of the pasta closed. Boil them in water with a little bit of vinegar. Garnish with fresh green herbs and serve. Fish-shaped apple and berry pies recipe serves 2 persons; preparation time ~ 20 minutes; cooking time ~ 10 minutes Ingredients: 500 g. unleavened dough, 2 apples, 300 g. cowberries, 150 g. powdered sugar, vegetable oil. Directions: Roll out the unleavened puff pastry dough into a thin layer and cut out circle-shaped pieces using a pastry cutter. To make the filling, chop the apple into small pieces and mix it in a bowl with the berries and powdered sugar. Put a scoop of the filling onto each circle of dough, pinching the edges together and forming the pastry into a fish shape. Fry the pies for 3 minutes on each side in a pan with a little bit of vegetable oil. Goat cheese dumpling omelet recipe serves 2 persons; preparation time ~ 40 minutes; cooking time ~ 15 minutes Ingredients: 500 g. flour, 2 eggs, 300 g. goat cheese, garlic, vegetable oil, 50 g. cream. Directions: To make the pasta, beat the eggs, a little water and salt together until the mixture has a uniform consistency. To prepare the filling, mash the cheese with a fork and add in as much or as little garlic paste as desired. Mix well. Make the dumplings by rolling out the dough into little circles and putting a small scoop of the cheese filling in the middle of each one. Pinch the edges of the pasta closed and boil in water. To make the omelet, beat the eggs, cream and a pinch of salt together. Put the already boiled dumplings into a small pan and add in the omelet mixture. Put the pan in the cooker to bake for 10 minutes. Garnish with fresh green herbs before serving.
