In Russian cuisine there is no dish nearly as popular as blini. This does not have to do simply with taste. In ancient times, blini carried a certain traditional and cultural significance – they were what you fed guests, what you ate to celebrate a birth and also after someone had died. Although nowadays this delightfully diverse dish doesn’t play the same role it used to, blini continue to be just as popular as ever. In St. Petersburg there is a special venue whose menu is dedicated solely to these popular pancakes.
