Pskov. Russian Cuisine of Past Epochs

The city of Pskov founded in 903 year is called a city where the history of Russia originates. For several centuries it has repulsed numerous enemy attacks and has gained fame as one of the most impregnable fortresses of Russia. The Epoch Cafe is located in one of the fortress walls, erected around Pskov as early as in the 15th century. Thus lunch in this restaurant turns not only to culinary pleasure but a true excursion. Ingredients for the dressing: 1 tsp. horseradish, 1 tsp. spicy mustard, fresh green herbs. Directions: Boil the tongue and cut it into small pieces. Also cut the cheese into small pieces. Saute the mushrooms in oil for 10 minutes. Set the lettuce on a plate. Then, in the shape of a half circle, place a layer of the cheese, then a layer of the tongue, and finally the mushrooms on the dish. To make the spicy dressing, mix the horseradish, mustard and finely chopped greens together. Garnish the dish with red bell pepper, olives and fresh herbs. Drizzle the dressing on top and serve. «Mother-in-law’s dream» cottage cheese and fruit dessert recipe serves 2 persons; preparation time ~ 5 minutes; cooking time ~ 15 minutes Ingredients: 150 g. flour, 2 eggs, 200 ml. milk, 1 orange, 50 g. strawberries, 10 g. almonds, 100 g. cottage cheese, 10 g. prunes, 50 g. chocolate, fresh mint. Directions: Make pancakes using the flour, egg and milk. With the help of a glass, form two of the pancakes into little baskets and place them in the cooker to dry out a bit. Peel the orange and carefully remove the pulp from the skin. Combine the prunes, orange, strawberries, almonds and cottage cheese together in the blender until they have a uniform consistency. Pour the fruity cottage cheese mixture into the pancake baskets. Garnish them with melted chocolate and fresh mint before serving.
