It’s a favorite dish in Russia – “Tabaka,” or Char-grilled chicken. It’s got nothing to do with tobacco, though. It’s actually a Georgian dish, and is also known as “Tapaka” chicken. It comes from the Georgian for “frying pan”, which is “tapa.” The “p” was swapped for a “b”, as often happens with Russian words. This happened in the mid-20th century, when the dish spread from Georgia across the whole of the Soviet Union.
