The Geography of Taste. “Tapaka” chicken

It’s a favorite dish in Russia – “Tabaka,” or Char-grilled chicken. It’s got nothing to do with tobacco, though. It’s actually a Georgian dish, and is also known as “Tapaka” chicken. It comes from the Georgian for “frying pan”, which is “tapa.” The “p” was swapped for a “b”, as often happens with Russian words. This happened in the mid-20th century, when the dish spread from Georgia across the whole of the Soviet Union. Igor Vukolov is going to share his own recipe for the dish, which remains popular to this day, in The Geography of Taste.
