The Geography of Taste. Balik Ekmek

Turkish cuisine – colorful, delicious and varied. It combines complex dishes and recipes that can be put together almost instantaneously. One of the most famous is Balik Ekmek – fried fish with vegetables in a crunchy roll. This sandwich entered the historical record in the 19th century. Legend has it that it was invented in Istanbul by humble fishermen whilst fishing in the Bosporus. If the catch was too big, some of the fish would have been fried right on the quay, put in bread and sold to all comers. Cheap and filling, the dish soon proved a hit. Its popularity grew and today it’s not just a local culinary tradition, it’s a dish that’s known all over the world.
