Azerbaijan cuisine — dyushbara and kutaby

Azerbaijan is a treasured find for any curious traveller as the fascinating country works to preserve not only its valued monuments and sights, but also its century-old traditions. This includes those of its flavourful cuisine. It is true that one dish often has many different preparations depending on the region of the country in which it’s prepared. RTG TV presenter Igor Maximenko became acquainted with the many intricacies of Azerbaijan’s national cuisine as he cooked dushbara (dumpling soup) and Baku-style qutab (a thin, dough pocket stuffed with meat, cheese, greens, etc., lightly-fried) with the help of one of Baku’s most talented head-chefs.
